Early harvest Extra Virgin Olive Oils(EVOO), while a bit more expensive, are well known for their low acidity, bitter taste, and high antioxidant levels.

We have perfected our olive picking times down to a science in order to maximize taste and the health benefits. We've produced over 1.7 million liters of extra virgin olive oil (EVOO) over the past century and have passed down these tactics from generation to generation.

The Olive Oil Times reports that early harvest EVOO can be more expensive and hard to find than other extra virgin oils since unripe olives produce less oil and need to be picked right from the trees. Even so, more are finding their bitter taste, extra low acidity, and higher antioxidant content worth the money.
