Why Polyphenols Matter in Extra Virgin Olive Oil

Polyphenols offer great health benefits. These compounds form during the unique malaxation process.

Oleocanthal and Oleacein are key for their anti-inflammatory and antioxidant effects.

A peppery taste signals Oleocanthal, while Oleacein adds a pleasant bitterness. This is a sign of high purity.

These attributes are hallmarks of premium oils, not defects. They signify a rich concentration of natural antioxidants.

    Uses and cooking

How do I enjoy 7Thirty by the tablespoon or as a shot?

    Enjoy 7Thirty uncooked by the tablespoon or as a small olive oil shot. Some customers enjoy it straight; others add fresh lemon or their favourite superfood ingredients for taste and variety. Some make it their 7:30 morning ritual, while others choose 7:30 in the evening. Choose the time that suits your routine;

What are the best finishing uses?

We recommend enjoying 7Thirty raw or as a finishing drizzle to savour its distinctive pepperiness and pleasant bitterness. Try it over salads, feta, warm vegetables, soups or cooked eggs, or enjoy it with fresh bread. Add it after cooking rather than making it your everyday cooking oil.

Can I use this finishing oil for sautéing or frying?

Our preference is to save 7Thirty for uncooked use and finishing, rather than routine sautéing or frying. For an occasional gentle-heat idea, try eggs cooked slowly over low heat with oregano and feta cheese, without letting the oil smoke. Better still, drizzle 7Thirty over the eggs after cooking. For high-heat searing or deep-frying, choose a separate cooking oil and reserve 7Thirty for the finishing touch.

Do healthcare professionals recommend 7Thirty for health reasons?

Doctors, nutritionists, naturopaths and dietitians have purchased 7Thirty and recommended it to their patients or clients for health reasons.

Where can I learn about the EU olive oil polyphenol health claim?

Our Greek Certified Gold education article explains Commission Regulation (EU) No 432/2012 and quotes the specific claim: “Olive oil polyphenols contribute to the protection of blood lipids from oxidative stress.” The article explains the qualifying composition and daily-intake conditions, and why the relevant harvest or batch analysis matters.

    J’adore!

    7THIRTY olive oil

"After researching to find a premium quality olive oil I found 7Thirty. The taste is wonderful and mild but has that kick so I know it is high in polyphenols which is what I was looking for. It arrived quickly and well packaged to preserve the integrity of the product. Love this olive oil. It has become a staple in our kitchen."

Amazing Olive Oil! The flavor is unreal!

A Teaspoon A Day Keeps The Pancreas Okay

"I was waiting for your product to reach our home so I could begin a therapeutic regimen of taking one teaspoon a day of your rare compound for a specific pancreatic organism that can lead to blood clotting. The recipe calls for your very specific tree leaves and early harvesting in the development of the oil of the olive flora. Studies have shown that this oil has a specific healing of the organisms' destruction capability that are living in one's pancreas. I have started on that dose every day since receiving my bottle. My hope is in that healing factor ---- along with my wife's great cooking ---- and our love for Italian recipes."

    — William B. (5/5)

    2nd bottle

"I am trying this for strickly medical, to see if it lowers bloodpressure, if not i have no desire to spend 100 bucks for a bottle of olive oil, will give to bottle 3? for any potential benifits."
