Tzatziki with Pizzazi

 
 
Ingredients:

2 x 1 Liter 3 % Yogurt

1/2 English cucumber with peel, grated

1 clove garlic, pressed

2 tablespoons fresh lemon juice

2 tablespoons Ilias and Sons extra-virgin olive oil

2 teaspoons grated lemon zest

3 tablespoons chopped parsley

1 tablespoon salt

1 tablespoon fresh ground black pepper

Directions:

Step 1 - Make the yogurt 

To do this right, we suggest you purchase 3% yogurt. We use  Balcan style Astro Yogurt.

  1. Remove the yogurt's byproducts using a cheese cloth or 100 hole per square inch strainer. You will be amazed at how much water and byproduct you remove.  Typically, 2 liters of yogurt will be reduced to 1 liter.
  2. Once strained, leave the yogurt in the fridge overnight on-top of a large bowl.
  3. Remove the byproduct in the morning.  This will leave you with a thick Greek style yogurt.

Tip: You can also remove the water from the cucumber by dabbing the cucumber with a paper towel or straining overnight.

Step 2 - Time to mix

  1. Stir together yogurt, grated cucumber, garlic, lemon juice, and olive oil in a bowl.
  2. Add lemon zest, parsley, salt, and pepper. Stir until you have the ingredients spread evenly through the yogurt. For a little Pizzazi, add a pinch of cayenne pepper!

Step 3 - Prep for serving

  1. Pour into a serving dish and cover tightly with saran wrap.
  2. Refrigerate 8 hours before serving.
