For people with irritable bowel syndrome (IBS), changing the way you cook can feel like losing favourite flavours. Garlic is a common concern during the low-FODMAP phase, but avoiding garlic pieces does not have to mean abandoning garlic flavour.
Garlic-infused olive oil offers a useful culinary approach. At Ilias and Sons, our Black Garlic and Speared Garlic infusions give customers two different ways to bring garlic character to Mediterranean-style meals. Understanding the oil, the ingredients and the portion is still important when planning a low-FODMAP diet.
FODMAP stands for fermentable oligosaccharides, disaccharides, monosaccharides and polyols. These are groups of short-chain carbohydrates that can contribute to digestive symptoms in susceptible people.
A low-FODMAP diet is a structured dietary approach used to help manage IBS symptoms, not a weight-loss diet or a reason for everyone to avoid carbohydrate foods. FODMAPs are not inherently unhealthy, and poor absorption does not mean they cause IBS.
The aim is to learn which foods and amounts you tolerate, then build a varied diet around that information. It is not to stay on the most restrictive version indefinitely.
IBS can involve abdominal pain, bloating and changes in bowel habits. Diet can be one part of managing symptoms, but a low-FODMAP approach is not a guaranteed cure or a replacement for medical assessment. If symptoms are new or unexplained, seek a diagnosis rather than assuming they are IBS.
Monash University's three-step guide describes the approach:
These stages replace the original article's suggestion of permanent, broad food removal. A dietitian can help protect variety and interpret the results.
Garlic and onion contain fructans, a type of oligosaccharide. Monash advises excluding these ingredients during the initial low-FODMAP phase, while offering alternatives for flavour.
The important distinction is that fructans dissolve in water, but not in oil. If garlic cooks in soup or stock, removing the cloves afterwards does not remove the fructans that have entered the liquid.
Oil-based infusion is different. Monash explains that garlic flavour can be introduced into oil without the fructans dissolving into it, provided the garlic pieces are removed before other ingredients are added.
Read Monash's explanation of cooking with onion and garlic.
For low-FODMAP cooking, focus on the infused oil rather than eating the garlic pieces. Check the particular bottle's ingredients and use instructions. Garlic powder, minced garlic, garlic puree and garlic solids should not be treated as equivalent to an oil-only infusion.
This distinction applies to black garlic too. Ageing garlic changes its flavour, but it does not automatically establish that every black garlic bulb, paste, glaze or stuffed olive is low FODMAP. The original article's blanket claim that black garlic retains flavour but loses its FODMAPs has been removed.
Product-specific information and serving size matter. General guidance about infusion is not independent certification of every garlic oil.
Our Gourmet Black Garlic Infused Greek Extra Virgin Olive Oil – Low FODMAP brings sweet, savoury, umami-forward depth to food. Its flavour has roasted-garlic, molasses and balsamic-like notes, without the sharpness of raw garlic.
This is our specifically low-FODMAP-labelled black garlic oil, not a claim about all black garlic foods. Use the current product guidance when choosing a portion for your own eating plan.
Our Gourmet Greek Speared Garlic Infused Extra Virgin Olive Oil offers a bolder, more classic garlic profile, using Ontario Rocambole garlic with Greek EVOO.
We offer this infusion alongside Black Garlic for customers who want garlic flavour in their cooking. For a low-FODMAP meal, use the infused oil rather than any garlic cloves or pieces. Check the current label and serving guidance; this article does not assert independent low-FODMAP certification for the Speared Garlic product.
Try a garlic-oil drizzle over roasted potatoes with rosemary, or finish plain grilled fish or chicken with oil and lemon. These are simple ways to put the oil's flavour at the centre without adding chopped garlic.
For a rice or quinoa bowl, combine your chosen garlic infusion with vegetables in portions suitable for your plan. For a dressing, use oil, lemon juice and herbs, checking the rest of the salad as carefully as the dressing.
A pasta dish can use garlic-infused oil for flavour, but choosing a pasta described as gluten-free does not by itself establish that the whole meal is low FODMAP. Sauces, ingredient lists, portions and individual tolerance still matter.
Black Garlic oil suits dishes where you want deeper savoury notes; Speared Garlic oil suits a more pronounced garlic character. Neither is an IBS treatment or a guarantee of symptom-free eating.
Plain olive oil contains no FODMAP carbohydrates, but “low FODMAP” is not the same as a promise that every amount of fat will suit every person with IBS. Choose quantities that fit your needs and tolerance.
Olives need their own assessment: fillings, marinades, garlic solids and serving sizes can change the picture. Do not assume garlic-stuffed olives have the same suitability as garlic-infused oil.
Use current serving guidance rather than a permanent list of “good” and “bad” foods. Monash's app and a FODMAP-trained dietitian can help with the specific foods and portions in your meals.
The goal is enjoyable food with fewer unnecessary restrictions. Monash also suggests chives, the green parts of spring onions, ginger, herbs and citrus as ways to bring flavour to low-FODMAP cooking.
Explore our Mediterranean diet guide for broader food ideas, adapting ingredients and portions to your low-FODMAP plan rather than treating every Mediterranean recipe as automatically suitable.
Choose Black Garlic Infused EVOO for mellow, savoury depth or Speared Garlic Infused EVOO for bold garlic flavour. Read the product guidance, keep garlic solids out of a low-FODMAP meal and work toward the least restrictive diet that suits you.
