    Garlic and EVOO Superfood Infusion

    Welcome to the first installment of our exciting series on superfood infusions, designed for our valued customers this year. Infusing Extra Virgin Olive Oil (EVOO) is a simple yet rewarding process. We believe in the DIY approach. Why? So you're not ripped off. This is crucial to avoid being misled into buying lower-grade olive oil with artificial flavors, compromising quality and taste.

    Our primary goal is to educate you on the proper methods of infusing extra virgin olive oil. We want you to achieve the best quality, flavor, aroma, and health benefits. One delightful combination in the culinary world is garlic and olive oil. Almost every dish benefits from these two ingredients together. This realization inspired the creation of Ilias and Sons' first fusion product. We hope you enjoy it and encourage you to share your feedback!

    While many articles and social media resources guide you through the infusion process, our research shows that they often fall short in teaching how to select the most crucial ingredient—EVOO.

    To maximize the quality of your infused garlic oil, it's essential to research what EVOO is and how to protect yourself from misleading products. Many infused olive oils on the market disguise the true, fresh flavor of high-quality EVOO. By doing your homework, you can ensure you're using the best ingredients!

    Over the next few months, we will help you learn what to look for when selecting herbs, spices, garlic, and olive oil for your infusions. You'll even have the chance to test your knowledge and skills in choosing the highest quality ingredients for your culinary creations.

    Speared Garlic Infused Extra Virgin Olive Oil:


    Our speared garlic Extra Virgin Olive Oil (EVOO) is made with 100% fresh, Greek, organic EVOO and garlic sourced from Canada. We carefully produce small batches of 8 liters at a time, ensuring we effectively remove any potential botulinum spores. You can trust that our infused oil contains no artificial colors, flavors, or preservatives.

    Garlic is a beloved ingredient, and we know our customers share this passion. Our speared garlic-infused EVOO adds a rich flavor and enticing aroma to any dish. Whether you drizzle this exquisite oil on fish, meats, vegetables, bread, or salads, you are guaranteed a gourmet garlic experience that elevates your culinary creations.

    It's important to note that heat is required when making garlic-infused EVOO to effectively kill any botulinum spores present in the garlic.

    How We Produce It:

    Ingredients:

    • 8 liters of Extra Virgin Olive Oil
    • 15 Garlic bulbs

    Step 1: Peel Garlic
    Begin by peeling the garlic cloves to prepare them for the infusion process.

    Step 2: Crush the Garlic
    Smash the garlic cloves with a knife until they spread open. We do not recommend dicing or using a machine, as this can leave more garlic pieces that need to be strained out later, complicating the infusion process.

    Step 3: Sauté the Garlic in Extra Virgin Olive Oil
    Sauté the crushed garlic in Extra Virgin Olive Oil for about 5 minutes over medium heat to release the flavors into the oil.

    Step 4: Heat the Mixture
    Add the remaining olive oil to the pan, reducing the heat from medium to low. Heat until it lightly bubbles. We let it simmer for 20 minutes to eradicate any botulinum spores.

    Step 5: Strain the Mixture
    Use three strainers and cheesecloth to remove all garlic pieces from the EVOO. This step is important for a smooth and tasty infused oil. If you don’t have three strainers, a standard one will work. To keep it safe, use the oil within six months to reduce the risk of botulism.

    Step 6: Remove from Heat and Let Cool
    Once straining is complete, remove the infused oil from the heat and let it cool. This is when the garlic and EVOO truly infuse, resulting in a delightful taste.

    Step 7: Store in a Refrigerated Area
    After cooling, store the oil in a refrigerated area to maintain its quality and flavor.

    Step 8: Enjoy!
