From Grove to Stove: Choosing Greek EVOO & Infusions for Everyday Meals

October 12, 2026 3 min read

Ilias and Sons Original Blend, Black Garlic and Cayenne Pepper olive oil bottles beside white beans, roasted vegetables, bread, lemon and black garlic.

From our grove to your stove: that has always been the idea behind Ilias and Sons. We want to share Greek olive oil that brings flavour and enjoyment to the meals you make every day.

Our original article introduced EVOO, black garlic and cayenne alongside health research. This updated guide keeps the connection between food, family and curiosity, while focusing on a practical question: which oil works best for the meal you want to make?

Our Greek olive oil foundation

Ilias and Sons connects generations of family olive-oil craftsmanship in Greece with our business in Ottawa. Our product story centres on flavour, freshness and the family traditions behind the food.

Our Gourmet Organic Original Blend brings together Koroneiki and Athinolia olives associated with our family groves in Vasilaki, Greece. 7Thirty offers a distinct early-harvest Koroneiki profile. They give you different starting points for your kitchen, rather than one compulsory choice for every dish.

Original Blend: an everyday starting point

Gourmet Organic Original Blend Greek EVOO offers a fruity, grassy character with a milder peppery finish. Use it for salads, marinades, bread dips and home cooking.

For a simple meal, combine vegetables or beans with a lemon-and-olive-oil dressing. Familiar ingredients can make Mediterranean-style cooking approachable without needing an elaborate menu.

7Thirty: a bold finishing character

7Thirty high-phenolic Greek EVOO brings bold, peppery early-harvest character. Explore it with greens, soups, bean dishes or tomatoes when you want the oil itself to stand out.

Visit the 7Thirty education page for more context. A high-phenolic claim should be connected with evidence for the harvest or lot you are considering.

Black garlic: sweet, savoury depth

Our Black Garlic Infused Greek EVOO brings umami richness with roasted, molasses-like and balsamic-like notes. Try it with mushrooms, roasted vegetables, risotto or a bread dip.

Black garlic develops its character through controlled ageing. Whole black garlic, concentrated extracts and infused oil are different preparations, so research about one does not automatically establish benefits for another.

Our black garlic research and cooking guide explains the distinction. For dietary questions, see our low-FODMAP garlic oil guide; whole cloves and bulbs should not automatically be treated like infused oil.

Cayenne: a warming finishing touch

Cayenne Pepper Pizza EVOO adds warming spice to pizza, pasta, eggs, beans and potatoes. Start with a little and adjust to taste.

For much stronger heat, Theo's Hotter Than Hell combines Carolina Reaper, cayenne and selected chilli peppers. Begin with a few drops and follow the product's heat warning.

These are culinary oils. Do not apply them to painful joints, damaged skin or other body areas as a treatment, as the original article suggested.

Herbs, citrus and smoke: choose by the dish

For tomato dishes, explore Basil EVOO. For potatoes and roasts, try Rosemary EVOO. For a classic Greek herbal note, choose Oregano EVOO.

Lemon EVOO brings brightness to fish, salads and grain bowls, while Orange Citrus EVOO works with roasted vegetables and sweet baking ideas.

For bold garlic aroma, explore Speared Garlic EVOO. For smoky finishing flavour, try Smoked EVOO.

Our full infusion guide covers the range and our custom-infusion option in more detail.

What the health research actually supports

The revised PREDIMED report found fewer major cardiovascular events among older adults at high cardiovascular risk assigned to Mediterranean diets supplemented with EVOO or nuts than in the reduced-fat advice comparison group.

A 2025 systematic review identified 17 clinical studies examining virgin olive oil, including EVOO, and cardiovascular health. It reported favourable findings involving cardiometabolic biomarkers and cardiovascular outcomes, while calling for larger, multicentre studies.

Read the revised PREDIMED report and 2025 cardiovascular review. These studies did not test our retail products or establish that an infusion prevents or treats disease.

Our original list of illnesses went beyond what we can establish for a bottle of oil. The stronger approach is to understand olive oil within a varied dietary pattern, not as a substitute for medical care.

Look for evidence, not just appealing words

Colour, flavour and a “superfood” description cannot establish a laboratory result. Ask which harvest or lot, test date, laboratory, method and compounds a phenolic report covers.

Read our polyphenol testing guide and Superfood of Superfoods page for further education. Ingredient studies should not be converted into promises of doubled benefits or assumed vitamin content in finished infusions.

Make the next meal the starting point

Choose an oil for a meal you already enjoy, then experiment with a dressing, marinade or finishing drizzle. Our Mediterranean diet and family guide offers more ideas.

For topical care, use our separate hair and skin-care guide rather than treating culinary infusions as beauty products.

Explore the product pages for current details or visit Where to Find Us for local shopping. From grove to stove, the aim is still good food worth sharing.
