Greek Mediterranean Lemon Chicken

  Lemon Chicken

One (2-3 lbs) whole chicken, cut into pieces

Three tablespoons Ilias and Sons Extra Virgin Olive Oil (EVOO)

Two chopped onions

Pinch of salt

Pinch of black pepper

1/2 teaspoon ground ginger

1/2 teaspoon paprika

One cup lemon juice

Two cups water

  1. Heat oil in large prepared to sauté
  2. Add onions and sprinkle with ginger and paprika. Sauté until onions become golden.
  3. Add chicken pieces and cook until meet is golden brown.
  4. Add 2 cups of water, lemon juice, salt, and pepper.
  5. Cook for about 1 hour, or until chicken is tender.
